Crumbled Blue

I have to recommend not only a great recipe, but also the book from which it came.  If you enjoy meat-free dining, as I do, then I recommend that you purchase the incredible cook-book by Hugh Fearnly-Whittingstall, called ‘River Cottage Veg Every Day’.

This is a fantastic book packed with simple ideas for the most delicious meals.  There’s also a very helpful section on how to stock your cupboard with things you can rely on for great flavour as well as great core ingredients as meat alternatives.

One recipe I  am particularly fond of is this Vegetarian Lasagne; using squash, fennel and crumbled blue cheese as the main components.  Give it a try – I defy anyone that enjoys these flavours, not to enjoy it.
